When a whole beef tenderloin is portioned out, it can yield some of the most popular foodservice items: Filet Mignon, Tournedos, Filet Steak, Filet de Boeuf, Biftek (beefsteak) or even Châteaubriand.
For best cooking results, preheat oven to 425°F. Season meat as desired (salt and pepper is usually all you need). Set tenderloin in a roasting pan and roast until the meat reaches an internal temperature of 145°F (40–60 minutes). Let rest for 15 minutes, cut and serve.
