Beef cheeks are taken from the facial muscle of cattle. As it is a hard working muscle, beef cheeks are an often tougher cut of meat, which is why they lend themselves to slow cooking.
To Cook:
Before cooking, trim off any excess fat or sinew around the beef. Although the fibers in the meat will break down over time, the sinew will remain tough and unpleasant, so it’s best to cut off as much of this as possible. Coat beef cheek meat with olive oil, salt and pepper. Add other seasonings to taste. Pour water in a slow cooker. Arrange onion and garlic around cheek meat in the slow cooker. Cook on low for about 7–8 hours until meat is tender. Bon appétit!
